In Honolulu, a low-key pita house called Shaloha Pita, led by the passionate Sagi, set out on a mission. They aimed to serve authentic Mediterranean fares like shawarma and falafel, focusing on their signature pocket pita bread. Their goal was crystal clear – to uphold the freshness, flavor, and authenticity that had their customers exclaiming, "Fresh pita... beyond yummy... amazing hummus... eggplant to die for"​.


The Pita Predicament

Shaloha Pita's unique baking process, however, posed challenges. Traditional baking equipment could not deliver the consistency and quality required for their signature pocket pita bread. Manual production was labor-intensive, leading to higher costs and challenges in scaling up without compromising the "beyond yummy" quality that customers loved.
